Ingredients:

  • 4 slices (120g) whole grain or white bread
  • 2 tbsp (28g) unsalted butter, softened
  • 1 tsp (5ml) olive oil
  • 4 slices (110g) mild cheddar or Monterey Jack cheese
  • 1 tbsp (15g) cream cheese
  • 2 tbsp (30g) finely minced steamed spinach or grated carrots

Instructions:

  1. Spread the softened butter evenly across one side of each bread slice.
  2. Place two slices butter-side down. Layer the cheese and optional veggie boost onto the bread.
  3. Top with the remaining bread slices, butter-side up, and press down firmly.
  4. Add olive oil to a non-stick skillet over medium-low heat.
  5. Place the sandwiches in the pan and cook for 3 minutes per side until the crust is mahogany-colored and golden-brown.
  6. Remove from the pan and let the sandwiches rest for 2 minutes to prevent cheese from running.
  7. Slice each sandwich into 4-6 mini strips or squares using a knife or cookie cutter.
