Ingredients:
- 4 slices (120g) whole grain or white bread
- 2 tbsp (28g) unsalted butter, softened
- 1 tsp (5ml) olive oil
- 4 slices (110g) mild cheddar or Monterey Jack cheese
- 1 tbsp (15g) cream cheese
- 2 tbsp (30g) finely minced steamed spinach or grated carrots
Instructions:
- Spread the softened butter evenly across one side of each bread slice.
- Place two slices butter-side down. Layer the cheese and optional veggie boost onto the bread.
- Top with the remaining bread slices, butter-side up, and press down firmly.
- Add olive oil to a non-stick skillet over medium-low heat.
- Place the sandwiches in the pan and cook for 3 minutes per side until the crust is mahogany-colored and golden-brown.
- Remove from the pan and let the sandwiches rest for 2 minutes to prevent cheese from running.
- Slice each sandwich into 4-6 mini strips or squares using a knife or cookie cutter.
