Ingredients:

  • 8 oz (225 g) cream cheese, softened
  • 1 cup (240 g) pumpkin puree (not pumpkin pie filling)
  • 1/2 cup (100 g) granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1 cup (150 g) graham cracker crumbs
  • 1/4 cup (50 g) powdered sugar
  • 1/2 tsp cinnamon
  • Drizzle of melted chocolate or caramel sauce (optional)

Instructions:

  1. In a mixing bowl, combine softened cream cheese, pumpkin puree, granulated sugar, vanilla extract, and pumpkin pie spice.
  2. Use a mixer to blend until smooth and creamy.
  3. Cover the bowl and refrigerate the filling for 15-20 minutes until slightly firm.
  4. Once chilled, scoop the mixture using a tablespoon or cookie scoop and roll into small balls.
  5. In another bowl, combine graham cracker crumbs, powdered sugar, and cinnamon.
  6. Roll each ball in the graham cracker mixture until well-coated.
  7. Place the coated balls on a baking sheet or plate and refrigerate for an additional 10 minutes to firm up.
  8. Drizzle with chocolate or caramel if desired and enjoy!
