Ingredients:
- 8 oz (225 g) cream cheese, softened
- 1 cup (240 g) pumpkin puree (not pumpkin pie filling)
- 1/2 cup (100 g) granulated sugar
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- 1 cup (150 g) graham cracker crumbs
- 1/4 cup (50 g) powdered sugar
- 1/2 tsp cinnamon
- Drizzle of melted chocolate or caramel sauce (optional)
Instructions:
- In a mixing bowl, combine softened cream cheese, pumpkin puree, granulated sugar, vanilla extract, and pumpkin pie spice.
- Use a mixer to blend until smooth and creamy.
- Cover the bowl and refrigerate the filling for 15-20 minutes until slightly firm.
- Once chilled, scoop the mixture using a tablespoon or cookie scoop and roll into small balls.
- In another bowl, combine graham cracker crumbs, powdered sugar, and cinnamon.
- Roll each ball in the graham cracker mixture until well-coated.
- Place the coated balls on a baking sheet or plate and refrigerate for an additional 10 minutes to firm up.
- Drizzle with chocolate or caramel if desired and enjoy!
