Ingredients:

  • 1/2 cup (120g) cottage cheese
  • 2 large (100g) eggs
  • 1/4 cup (60ml) unsweetened almond milk
  • 1 tsp (5ml) vanilla extract
  • 1/2 tsp (2g) ground cinnamon
  • 1 tbsp (15g) maple syrup
  • 6 slices (240g) whole grain bread
  • 1 tbsp (14g) unsalted butter

Instructions:

  1. Combine cottage cheese, eggs, almond milk, vanilla extract, cinnamon, and maple syrup in a blender.
  2. Blend on high for 30 seconds until the mixture is completely smooth and no cottage cheese curds remain; pour into a shallow dish.
  3. Dip each slice of bread into the custard for 15–20 seconds per side until saturated but structurally sound.
  4. Melt butter in a non-stick skillet over medium heat until the butter stops foaming and begins to shimmer.
  5. Place soaked slices in the pan and cook for 3–4 minutes per side until the exterior is deep golden-brown and nutty in aroma.
