Ingredients:
- 2 cups (240 g) all-purpose flour
- 1 ½ cups (300 g) granulated sugar
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- 4 large eggs
- 1 can (15 oz or 425 g) Libby
- s pure pumpkin puree
- 1 cup (240 ml) vegetable oil
- 1 cup (150 g) chopped walnuts or pecans (optional)
- ½ cup (90 g) raisins or cranberries (optional)
Instructions:
- Preheat oven to 350°F (175°C).
- Grease and flour the loaf pans or line with parchment paper.
- In a mixing bowl, whisk together the flour, sugar, baking soda, baking powder, salt, and spices.
- In another bowl, combine the eggs, pumpkin puree, and oil. Mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- If desired, fold in the walnuts or other add-ins.
- Pour the batter evenly into the prepared loaf pans.
- Bake in the preheated oven for 60-70 minutes, or until a toothpick comes out clean.
- Allow to cool in the pans for 10 minutes, then remove and cool completely on a wire rack.
