Ingredients:

  • 2 cups (240 g) all-purpose flour
  • 1 ½ cups (300 g) granulated sugar
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 4 large eggs
  • 1 can (15 oz or 425 g) Libby
  • s pure pumpkin puree
  • 1 cup (240 ml) vegetable oil
  • 1 cup (150 g) chopped walnuts or pecans (optional)
  • ½ cup (90 g) raisins or cranberries (optional)

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour the loaf pans or line with parchment paper.
  3. In a mixing bowl, whisk together the flour, sugar, baking soda, baking powder, salt, and spices.
  4. In another bowl, combine the eggs, pumpkin puree, and oil. Mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. If desired, fold in the walnuts or other add-ins.
  7. Pour the batter evenly into the prepared loaf pans.
  8. Bake in the preheated oven for 60-70 minutes, or until a toothpick comes out clean.
  9. Allow to cool in the pans for 10 minutes, then remove and cool completely on a wire rack.
