Ingredients:
- 4 salmon fillets, 6 oz (170g) each, skin-on
- 2 tbsp (30ml) olive oil
- 1 tsp (6g) kosher salt
- 1/2 tsp (2g) cracked black pepper
- 1 tsp (3g) garlic powder
- 1 tsp (3g) smoked paprika
- 1/2 tsp (1g) dried oregano
Instructions:
- Preheat your oven to 450°F (230°C) and line a large rimmed baking sheet with parchment paper.
- Use paper towels to pat the salmon fillets bone-dry to ensure the skin roasts rather than steams.
- Rub each fillet with olive oil and coat generously with the seasoning mix (salt, pepper, garlic powder, smoked paprika, and oregano).
- Place the fillets skin-side down on the baking sheet and roast on the center rack for 12-15 minutes, until edges are deep golden brown.
- Remove the fillets from the oven once the internal temperature hits 135°F (57°C).
- Transfer the fillets to a plate and let them rest for 5 minutes to allow the internal temperature to reach a perfect 145°F (63°C).
