Ingredients:

  • 2.5 cups (315g) all-purpose flour
  • 1.5 cups (300g) granulated sugar
  • 2.5 tsp (12g) baking powder
  • 0.5 tsp (3g) salt
  • 0.5 cup (113g) unsalted butter, softened
  • 0.5 cup (120ml) vegetable oil
  • 3 large eggs, room temperature
  • 1 cup (240ml) whole milk, room temperature
  • 1 tbsp (15ml) pure vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease your 9x13 inch pan and line the bottom with parchment paper.
  2. Whisk the flour, baking powder, and salt in a medium bowl.
  3. Beat the softened butter, oil, and sugar on medium high speed until the mixture looks pale and fluffy.
  4. Add the eggs one at a time, beating well after each, then stir in the vanilla extract.
  5. Turn your mixer to low speed. Add one third of the flour mixture, then half of the milk.
  6. Repeat the process, ending with the final third of the flour. Mix only until the last streak of flour disappears.
  7. Pour the batter into your pan and smooth it out with a spatula.
  8. Bake for 30-35 minutes until a toothpick in the center comes out clean and edges pull away from the pan.
  9. Let it cool in the pan for 10 minutes before moving.
