Ingredients:
- 2.5 cups (315g) all-purpose flour
- 1.5 cups (300g) granulated sugar
- 2.5 tsp (12g) baking powder
- 0.5 tsp (3g) salt
- 0.5 cup (113g) unsalted butter, softened
- 0.5 cup (120ml) vegetable oil
- 3 large eggs, room temperature
- 1 cup (240ml) whole milk, room temperature
- 1 tbsp (15ml) pure vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C). Grease your 9x13 inch pan and line the bottom with parchment paper.
- Whisk the flour, baking powder, and salt in a medium bowl.
- Beat the softened butter, oil, and sugar on medium high speed until the mixture looks pale and fluffy.
- Add the eggs one at a time, beating well after each, then stir in the vanilla extract.
- Turn your mixer to low speed. Add one third of the flour mixture, then half of the milk.
- Repeat the process, ending with the final third of the flour. Mix only until the last streak of flour disappears.
- Pour the batter into your pan and smooth it out with a spatula.
- Bake for 30-35 minutes until a toothpick in the center comes out clean and edges pull away from the pan.
- Let it cool in the pan for 10 minutes before moving.
