Ingredients:

  • 4 (6 oz each) Salmon Fillets, skin on or off
  • 2 Tbsp Extra Virgin Olive Oil
  • 2 Tbsp Fresh Dill, chopped
  • 1 Tbsp Fresh Parsley, chopped
  • 1 tsp Lemon Zest
  • 1 Tbsp Lemon Juice, freshly squeezed
  • 1/2 tsp Garlic Powder
  • 3/4 tsp Kosher Salt or Sea Salt
  • 1/2 tsp Freshly Ground Black Pepper

Instructions:

  1. Preheat the Oven: Adjust the oven rack to the middle position and preheat the oven to 400°F (200°C).
  2. Prep the Pan: Line a rimmed baking sheet with parchment paper or foil for non-stick results and easy clean-up.
  3. Mix the Glaze: In a small mixing bowl, combine the olive oil, chopped dill, parsley, lemon zest, lemon juice, garlic powder, salt, and pepper. Whisk until fully incorporated.
  4. Prep the Salmon: Pat the salmon fillets completely dry with paper towels. Place the fillets, skin-side down (if using skin-on), on the prepared baking sheet, ensuring space between them.
  5. Apply the Glaze: Spoon the herb and oil mixture evenly over the top of each fillet, spreading gently to ensure the surface is fully coated.
  6. Bake the Fish: Place the baking sheet into the preheated oven and bake for 12 to 15 minutes.
  7. Monitor Doneness: The salmon is done when it is opaque pink and flakes easily with a fork, or reaches an internal temperature of 140°F (60°C). Note that the fish will carryover cook.
  8. Rest and Serve: Remove the baking sheet from the oven and allow the fillets to rest directly on the sheet for 3–5 minutes. Garnish with an extra sprinkle of fresh dill or lemon, and serve immediately.
