Ingredients:
- 6 large eggs
- 1 cup cottage cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1 cup shredded sharp cheddar cheese
- 2 tbsp melted unsalted butter
- 1/4 cup chopped fresh chives
- 1/4 cup finely diced red bell pepper
- 1/4 cup crumbled feta cheese
Instructions:
- Add the eggs, cottage cheese, salt, pepper, and garlic powder to a high-speed blender. Process on high for 10-15 seconds until the mixture is completely smooth and slightly frothy.
- Preheat the oven to 350°F (175°C). Generously grease a 12-slot muffin tin with melted butter or non-stick spray.
- Distribute the shredded cheddar cheese, chopped chives, diced red bell pepper, and crumbled feta cheese evenly across the bottom of each muffin slot.
- Pour the blended egg mixture over the cheese and vegetables until each slot is approximately 3/4 full.
- Bake for 20-25 minutes until the centers are set with a slight jiggle and the edges are barely golden. Allow to cool for 5 minutes before removing from the tin.
