Ingredients:

  • 6 large eggs
  • 1 cup cottage cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1 cup shredded sharp cheddar cheese
  • 2 tbsp melted unsalted butter
  • 1/4 cup chopped fresh chives
  • 1/4 cup finely diced red bell pepper
  • 1/4 cup crumbled feta cheese

Instructions:

  1. Add the eggs, cottage cheese, salt, pepper, and garlic powder to a high-speed blender. Process on high for 10-15 seconds until the mixture is completely smooth and slightly frothy.
  2. Preheat the oven to 350°F (175°C). Generously grease a 12-slot muffin tin with melted butter or non-stick spray.
  3. Distribute the shredded cheddar cheese, chopped chives, diced red bell pepper, and crumbled feta cheese evenly across the bottom of each muffin slot.
  4. Pour the blended egg mixture over the cheese and vegetables until each slot is approximately 3/4 full.
  5. Bake for 20-25 minutes until the centers are set with a slight jiggle and the edges are barely golden. Allow to cool for 5 minutes before removing from the tin.
