Ingredients:
- 2 large ripe bananas, yellow, but still firm (unblemished preferred)
- 2 Tbsp (30 g) melted unsalted butter
- 2 Tbsp (25 g) packed light brown sugar
Instructions:
- Preheat the oven to 375°F (190°C).
- Prepare the Bananas: Place the two bananas, peel-on, onto the baking dish. Using a sharp knife, slice the banana lengthwise down the middle, cutting only through the skin and the fruit, leaving the bottom peel intact to act as a natural boat. Do not peel them yet.
- Prepare the Glaze: In a small mixing bowl, combine the 2 tablespoons of melted butter and the 2 tablespoons of brown sugar until a thick, sandy paste forms.
- Dress the Bananas: Gently pry open the scored bananas slightly. Divide the butter-sugar mixture evenly between the two bananas, placing it directly onto the exposed fruit flesh. Focus on pushing the mixture into the centre cut.
- Bake: Transfer the dish to the preheated oven. Bake for 15 to 20 minutes.
- Check for Doneness: The bananas are finished when the skin has turned black in spots, the flesh is completely soft, and the sugar mixture is bubbling, melted, and slightly caramelised around the edges.
- Serve Immediately: Remove from the oven. Carefully scoop the baked banana (flesh and caramelised sauce) out of the skin using a spoon, or serve directly in the baking dish.
