Ingredients:

  • 2 large ripe bananas, yellow, but still firm (unblemished preferred)
  • 2 Tbsp (30 g) melted unsalted butter
  • 2 Tbsp (25 g) packed light brown sugar

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the Bananas: Place the two bananas, peel-on, onto the baking dish. Using a sharp knife, slice the banana lengthwise down the middle, cutting only through the skin and the fruit, leaving the bottom peel intact to act as a natural boat. Do not peel them yet.
  3. Prepare the Glaze: In a small mixing bowl, combine the 2 tablespoons of melted butter and the 2 tablespoons of brown sugar until a thick, sandy paste forms.
  4. Dress the Bananas: Gently pry open the scored bananas slightly. Divide the butter-sugar mixture evenly between the two bananas, placing it directly onto the exposed fruit flesh. Focus on pushing the mixture into the centre cut.
  5. Bake: Transfer the dish to the preheated oven. Bake for 15 to 20 minutes.
  6. Check for Doneness: The bananas are finished when the skin has turned black in spots, the flesh is completely soft, and the sugar mixture is bubbling, melted, and slightly caramelised around the edges.
  7. Serve Immediately: Remove from the oven. Carefully scoop the baked banana (flesh and caramelised sauce) out of the skin using a spoon, or serve directly in the baking dish.
