Ingredients:
- 2 cups (180g) rolled oats
- 1 tsp (5g) baking powder
- 1/2 tsp (3g) baking soda
- 1/2 tsp (3g) salt
- 1 tbsp (6g) ground cinnamon
- 1/4 tsp (1g) ground nutmeg
- 1 1/2 cups (225g) grated zucchini, squeezed dry
- 2 large (100g) eggs
- 1/3 cup (80ml) maple syrup
- 1/3 cup (80ml) coconut oil, melted
- 1 tsp (5ml) vanilla extract
- 1/4 cup (60ml) unsweetened almond milk
Instructions:
- Preheat your oven to 350°F (175°C) and line a 12 cup standard muffin tin.
- Grate the zucchini using the fine holes of a box grater. Place the shreds in a clean kitchen towel and squeeze firmly over the sink until no more liquid drips out.
- In a large bowl, whisk together the rolled oats, baking powder, baking soda, salt, cinnamon, and nutmeg until no clumps remain.
- In a separate bowl, beat the eggs, maple syrup, melted coconut oil, vanilla extract, and almond milk.
- Fold the wet ingredients into the dry mixture.
- Gently stir in the squeezed zucchini until just combined. Note: Overmixing here will lead to dense, heavy muffins.
- Spoon the batter into the muffin cups, filling them approximately 3/4 full.
- Bake for 18–22 minutes until the tops are mahogany colored and a toothpick comes out with only a few moist crumbs.
- Let the muffins cool in the pan for 5 minutes before transferring them to a cooling rack.
