Ingredients:

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves, chopped
  • 1 large egg, lightly beaten
  • 1/4 cup chopped green onions
  • Oil for frying (e.g., olive oil or vegetable oil)
  • Plain Greek yogurt (optional)
  • Lemon wedges (to taste)

Instructions:

  1. Grate the zucchinis using a box grater or food processor. Place grated zucchini in a clean towel and squeeze out excess moisture.
  2. In a mixing bowl, combine grated zucchini, salt, and let sit for 5 minutes. Add flour, baking powder, black pepper, parmesan, feta, mint, egg, and green onions. Mix until well combined.
  3. In a non-stick frying pan, heat oil over medium-high heat until shimmering.
  4. Using a spoon or your hands, form mixture into small patties. Gently place patties in the hot oil, being careful not to overcrowd the pan. Fry until golden brown on both sides (about 3-4 minutes per side).
  5. Use a slotted spoon to remove fritters from the pan and drain them on paper towels. Serve warm with yogurt and lemon wedges.
