Ingredients:

  • 2 medium zucchini, halved lengthwise (about 1 pound / 450g)
  • 2 tablespoons olive oil (30ml)
  • Salt and freshly ground black pepper to taste
  • 1 cup marinara sauce (240ml)
  • 1 teaspoon Italian seasoning (5ml)
  • 1 cup shredded mozzarella cheese (115g)
  • 1/2 cup pepperoni slices (50g), or other desired toppings
  • Fresh basil leaves, for garnish (optional)

Instructions:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Scoop out some of the zucchini pulp, leaving a 1/4-inch (6mm) border. Drizzle the zucchini halves with olive oil, season with salt and pepper.
  3. Place the zucchini boats cut-side up on the prepared baking sheet and bake for 10 minutes to soften slightly.
  4. Remove from the oven. Spread marinara sauce evenly inside each zucchini boat. Sprinkle with Italian seasoning.
  5. Sprinkle mozzarella cheese over the sauce, then add your desired toppings.
  6. Return the baking sheet to the oven and bake for 10-15 minutes, or until the cheese is melted and bubbly, and the zucchini is tender.
  7. Garnish with fresh basil leaves, if desired. Serve immediately.
