Ingredients:
- 2 medium zucchini, halved lengthwise (about 1 pound / 450g)
- 2 tablespoons olive oil (30ml)
- Salt and freshly ground black pepper to taste
- 1 cup marinara sauce (240ml)
- 1 teaspoon Italian seasoning (5ml)
- 1 cup shredded mozzarella cheese (115g)
- 1/2 cup pepperoni slices (50g), or other desired toppings
- Fresh basil leaves, for garnish (optional)
Instructions:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Scoop out some of the zucchini pulp, leaving a 1/4-inch (6mm) border. Drizzle the zucchini halves with olive oil, season with salt and pepper.
- Place the zucchini boats cut-side up on the prepared baking sheet and bake for 10 minutes to soften slightly.
- Remove from the oven. Spread marinara sauce evenly inside each zucchini boat. Sprinkle with Italian seasoning.
- Sprinkle mozzarella cheese over the sauce, then add your desired toppings.
- Return the baking sheet to the oven and bake for 10-15 minutes, or until the cheese is melted and bubbly, and the zucchini is tender.
- Garnish with fresh basil leaves, if desired. Serve immediately.
