Ingredients:

  • 1 lb 93% lean Ground Turkey
  • 1 tbsp Olive Oil or Avocado Oil
  • 1/2 medium Yellow Onion, finely diced
  • 2 cloves Garlic, minced
  • 1/2 cup Chicken or Vegetable Broth
  • 1 tbsp Tomato Paste (optional)
  • Salt and Black Pepper, to taste
  • 1 tbsp Chili Powder (for seasoning blend)
  • 1 tsp Cumin (for seasoning blend)
  • 1 tsp Smoked Paprika (for seasoning blend)
  • 1/2 tsp Dried Oregano (for seasoning blend)
  • 1/4 tsp Cayenne Pepper (optional, for seasoning blend)
  • 1 large head Butter Lettuce or Iceberg Lettuce
  • Salsa, as desired (for topping)
  • 1/4 cup Cilantro, chopped (for topping)
  • 1 medium Avocado or Guacamole (for topping)
  • 1/2 cup Shredded Cheese (cheddar or cotija, for topping)

Instructions:

  1. Dice the onion and mince the garlic. Heat the oil in a large skillet over medium-high heat. Add the onion and sauté for 3-4 minutes until softened and translucent. Add the minced garlic and cook for 1 minute until fragrant.
  2. Push the aromatics to the side of the pan. Add the ground turkey to the center and break it up with a spatula. Brown the turkey thoroughly for 5-7 minutes, ensuring no pink remains. Drain excess fat if necessary.
  3. Reduce the heat to medium. Sprinkle the taco seasoning blend (chili powder, cumin, paprika, oregano, cayenne, salt, and pepper) directly onto the cooked turkey. Stir constantly for 30 seconds to lightly toast the spices.
  4. Stir in the tomato paste (if using) and the chicken broth. Bring the mixture to a gentle simmer. Cook uncovered for 3-5 minutes, allowing the liquid to reduce and the spices to fully coat and moisten the turkey. The filling should be juicy but not watery.
  5. While the filling simmers, gently wash and separate the lettuce leaves. Arrange the best lettuce cups on a platter.
  6. Spoon the warm turkey taco filling into the center of each crisp lettuce cup. Garnish immediately with your choice of toppings: salsa, chopped cilantro, avocado slices, and shredded cheese.
