Ingredients:
- 2 cups green papaya, shredded
- 1 cup cherry tomatoes, halved
- 1/2 cup green beans, cut into 1-inch pieces
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons roasted peanuts, crushed
- 3 tablespoons lime juice (freshly squeezed)
- 2 tablespoons fish sauce
- 1 tablespoon palm sugar (or brown sugar)
- 1-2 Thai bird's eye chilies, minced
Instructions:
- In a mortar, combine minced chilies and palm sugar; crush until well mixed.
- Add lime juice and fish sauce; stir to combine.
- Peel and shred the green papaya into thin strips.
- Cut cherry tomatoes in half and green beans into 1-inch pieces.
- In a large mixing bowl, add shredded papaya, cherry tomatoes, green beans, and chopped cilantro.
- Pour the dressing over the salad; toss gently to combine.
- Top with crushed peanuts and enjoy immediately.
