Ingredients:

  • 2 cups green papaya, shredded
  • 1 cup cherry tomatoes, halved
  • 1/2 cup green beans, cut into 1-inch pieces
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons roasted peanuts, crushed
  • 3 tablespoons lime juice (freshly squeezed)
  • 2 tablespoons fish sauce
  • 1 tablespoon palm sugar (or brown sugar)
  • 1-2 Thai bird's eye chilies, minced

Instructions:

  1. In a mortar, combine minced chilies and palm sugar; crush until well mixed.
  2. Add lime juice and fish sauce; stir to combine.
  3. Peel and shred the green papaya into thin strips.
  4. Cut cherry tomatoes in half and green beans into 1-inch pieces.
  5. In a large mixing bowl, add shredded papaya, cherry tomatoes, green beans, and chopped cilantro.
  6. Pour the dressing over the salad; toss gently to combine.
  7. Top with crushed peanuts and enjoy immediately.
