Ingredients:
- 1/2 cup Fresh Lime Juice (approx. 4 large limes)
- 1/4 cup Extra Virgin Olive Oil
- 1 teaspoon Fresh Lime Zest (zest of 1 whole lime)
- 1 teaspoon Honey or Maple Syrup (optional, to balance acidity)
- 1 clove Garlic, finely minced or pressed
- 1/2 small Jalapeño or Red Chili, finely minced, seeds removed
- 1/2 teaspoon Sea Salt
- 1/4 teaspoon Freshly Ground Black Pepper
- 1 pound Raw Shrimp (Prawns), large, peeled, and deveined (31/40 count)
- 2 large Hass Avocados, ripe but firm
- 1/4 cup Red Onion, very finely diced
- 1 cup Cherry Tomatoes, halved or quartered
- 1/2 cup Frozen Sweetcorn, thawed and drained
- 1/4 cup packed Fresh Cilantro (Coriander), roughly chopped
Instructions:
- Cook the peeled and deveined shrimp (prawns). Bring a small saucepan of salted water to a gentle boil, or lightly sauté shrimp in oil. Cook for 2–4 minutes until they turn pink and opaque. Immediately drain and transfer them to an ice bath to halt the cooking process. Once cooled, pat them completely dry and set aside.
- Whisk the Zesty Dressing: In a medium bowl, whisk together the lime juice, olive oil, lime zest, and optional honey until slightly emulsified. Stir in the minced garlic and finely diced chilli/jalapeño. Season generously with salt and pepper.
- Marinate the Shrimp: Add the cooled, dried shrimp to the dressing bowl. Toss gently to ensure every piece is coated. Cover the bowl and refrigerate for a minimum of 15 minutes. This chilling process is vital for flavor infusion.
- Prep the Remaining Vegetables: Dice the red onion finely and halve the cherry tomatoes. Thaw the sweetcorn. Cube the avocados just before assembly (to prevent browning).
- Final Assembly: Transfer the marinated shrimp and all the remaining dressing into the large serving bowl with the diced onion, tomatoes, and corn. Stir in the fresh cilantro (coriander). Add the cubed avocado last, and gently fold the salad 2-3 times to combine without crushing the avocado chunks.
- Serve immediately or chill for up to 30 minutes more for optimal flavor melding. Taste and adjust seasoning with extra salt or lime juice if needed before serving.
