Ingredients:
- 1/4 cup olive oil
- Zest of 1 large lemon
- 1/4 cup fresh lemon juice (about 2 lemons)
- 2 cloves garlic, minced
- 2 teaspoons dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon honey (optional for sweetness)
- 4 boneless, skinless chicken breasts (about 1.5 lbs total)
Instructions:
- In a mixing bowl, combine olive oil, lemon zest, lemon juice, minced garlic, oregano, thyme, salt, pepper, and honey (if using). Whisk until well combined.
- Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (up to 4 hours for more flavor).
- Preheat the grill or skillet over medium-high heat. Remove chicken from marinade and discard the leftover marinade. Grill or pan-fry chicken for 6-8 minutes per side, until cooked through and internal temperature reaches 165°F (74°C).
- Let the chicken rest for 5 minutes before slicing and serving.
