Ingredients:
- 4 (6-ounce) salmon fillets, skin-on
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- Zest of 1 lemon
- 2 tablespoons fresh lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper, to taste
- Fresh parsley, chopped, for serving
- Lemon wedges, for serving
Instructions:
- In a mixing bowl, whisk together olive oil, minced garlic, lemon zest, lemon juice, Dijon mustard, salt, and pepper until well combined.
- Place salmon fillets in a shallow dish and pour marinade over them. Ensure they are well coated. Let marinate for at least 15 minutes.
- Preheat the grill to medium-high heat (about 375°F/190°C).
- Remove salmon from the marinade and place on the grill skin-side down. Grill for 6-7 minutes, then carefully flip and grill for another 4-5 minutes until the salmon flakes easily with a fork.
- Transfer grilled salmon to a platter, garnish with fresh parsley and lemon wedges. Serve immediately.
