Ingredients:

  • 2 tablespoons olive oil (30 ml)
  • 1 small yellow onion, finely chopped (approx. 1/2 cup)
  • 2 cloves garlic, minced (about 1 teaspoon)
  • 1 1/2 cups long-grain white rice (300g), rinsed well
  • 3 cups chicken broth or vegetable broth (720 ml)
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1 cup fresh cilantro, loosely packed (approx. 25g), roughly chopped
  • Juice and zest of 2 limes
  • Optional: 1 jalapeño, seeded and minced

Instructions:

  1. Heat olive oil in a saucepan over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds.
  2. Add the rinsed rice to the saucepan and cook, stirring constantly, for 1-2 minutes.
  3. Pour in the chicken broth (or vegetable broth). Add salt and pepper. Bring to a boil.
  4. Reduce heat to low, cover the saucepan tightly, and simmer for 18-20 minutes, or until the liquid is absorbed and the rice is tender. Do not lift the lid!
  5. Remove from heat and let stand, covered, for 5 minutes. Fluff the rice with a fork.
  6. Stir in the chopped cilantro, lime zest, and lime juice. Taste and adjust seasoning as needed.
