Ingredients:
- 1 cup heavy cream
- 2 tablespoons granulated sugar
- 2 teaspoons instant coffee granules
- 1 tablespoon hot water
- 1 teaspoon vanilla extract
- 2 large egg whites
- Pinch of salt
Instructions:
- Dissolve instant coffee in hot water. Set aside to cool slightly.
- In a mixing bowl, add heavy cream, sugar, and vanilla extract. Using an electric mixer, whisk until soft peaks form.
- In another clean bowl, beat egg whites and a pinch of salt until stiff peaks form.
- Fold the cooled coffee mixture into the whipped cream gently. Then, fold in the whipped egg whites until fully combined.
- Spoon the mousse into dessert cups.
- For best flavor and texture, chill for 30 minutes before serving.
