Ingredients:

  • 1 cup heavy cream
  • 2 tablespoons granulated sugar
  • 2 teaspoons instant coffee granules
  • 1 tablespoon hot water
  • 1 teaspoon vanilla extract
  • 2 large egg whites
  • Pinch of salt

Instructions:

  1. Dissolve instant coffee in hot water. Set aside to cool slightly.
  2. In a mixing bowl, add heavy cream, sugar, and vanilla extract. Using an electric mixer, whisk until soft peaks form.
  3. In another clean bowl, beat egg whites and a pinch of salt until stiff peaks form.
  4. Fold the cooled coffee mixture into the whipped cream gently. Then, fold in the whipped egg whites until fully combined.
  5. Spoon the mousse into dessert cups.
  6. For best flavor and texture, chill for 30 minutes before serving.
