Ingredients:

  • 4 cups (approximately 900g) seedless watermelon, cut into 1-inch (2.5cm) cubes
  • 8 ounces (225g) block of feta cheese, cut into 1-inch (2.5cm) cubes
  • 1/4 cup (60ml) fresh mint leaves, roughly chopped
  • 12 wooden skewers (soaked in water for 30 minutes if grilling - optional)
  • 1 cup (240ml) balsamic vinegar
  • 2 tablespoons honey or maple syrup (optional)

Instructions:

  1. Combine balsamic vinegar and honey (if using) in a small saucepan. Bring to a simmer over medium heat.
  2. Reduce heat to low and simmer for 10-15 minutes, or until the glaze has thickened to a syrupy consistency, coating the back of a spoon.
  3. Remove from heat and let the glaze cool completely. It will thicken further as it cools.
  4. Thread watermelon and feta cubes onto each skewer, alternating ingredients.
  5. Arrange the skewers on a serving platter. Drizzle generously with the cooled balsamic glaze. Garnish with fresh mint leaves.
  6. Chill the skewers for at least 30 minutes before serving.
  7. Serve immediately.
