Ingredients:
- 4 cups (approximately 900g) seedless watermelon, cut into 1-inch (2.5cm) cubes
- 8 ounces (225g) block of feta cheese, cut into 1-inch (2.5cm) cubes
- 1/4 cup (60ml) fresh mint leaves, roughly chopped
- 12 wooden skewers (soaked in water for 30 minutes if grilling - optional)
- 1 cup (240ml) balsamic vinegar
- 2 tablespoons honey or maple syrup (optional)
Instructions:
- Combine balsamic vinegar and honey (if using) in a small saucepan. Bring to a simmer over medium heat.
- Reduce heat to low and simmer for 10-15 minutes, or until the glaze has thickened to a syrupy consistency, coating the back of a spoon.
- Remove from heat and let the glaze cool completely. It will thicken further as it cools.
- Thread watermelon and feta cubes onto each skewer, alternating ingredients.
- Arrange the skewers on a serving platter. Drizzle generously with the cooled balsamic glaze. Garnish with fresh mint leaves.
- Chill the skewers for at least 30 minutes before serving.
- Serve immediately.
