Ingredients:
- 6 cups cubed watermelon
- 4 ounces feta cheese, crumbled
- 1/4 cup thinly sliced red onion
- 1/4 cup fresh mint leaves, roughly chopped
- 1/4 cup Kalamata olives, pitted and halved (optional)
- 2 tablespoons extra virgin olive oil
- 2 tablespoons fresh lime juice
- 1 tablespoon honey
- 1/4 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
Instructions:
- In a small bowl, whisk together olive oil, lime juice, honey, salt, and pepper until well combined.
- In a large bowl, gently combine the cubed watermelon, crumbled feta, red onion, mint, and olives (if using).
- Pour the dressing over the salad and gently toss to coat.
- For best flavor, chill the salad in the refrigerator for at least 15 minutes before serving. This allows the flavors to meld together.
- Serve immediately, garnished with extra mint if desired.
