Ingredients:

  • 6 cups cubed watermelon
  • 4 ounces feta cheese, crumbled
  • 1/4 cup thinly sliced red onion
  • 1/4 cup fresh mint leaves, roughly chopped
  • 1/4 cup Kalamata olives, pitted and halved (optional)
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper

Instructions:

  1. In a small bowl, whisk together olive oil, lime juice, honey, salt, and pepper until well combined.
  2. In a large bowl, gently combine the cubed watermelon, crumbled feta, red onion, mint, and olives (if using).
  3. Pour the dressing over the salad and gently toss to coat.
  4. For best flavor, chill the salad in the refrigerator for at least 15 minutes before serving. This allows the flavors to meld together.
  5. Serve immediately, garnished with extra mint if desired.
