Ingredients:
- 4 cups (600g) cubed seedless watermelon
- 1/2 cup (120 ml) vodka (or gin)
- 1/4 cup (60 ml) fresh lime juice
- 1/4 cup (60 ml) simple syrup (equal parts sugar and water)
- 10-12 fresh basil leaves
- Ice cubes
- Watermelon wedges (for garnish)
- Fresh basil sprigs (for garnish)
Instructions:
- Combine the watermelon cubes in a blender and blend until smooth. Strain through a fine-mesh sieve or cheesecloth to remove any pulp.
- In a cocktail shaker (or a jar with a tight-fitting lid), gently muddle the basil leaves with the lime juice and simple syrup.
- Add the strained watermelon juice and vodka (or gin) to the shaker. Fill with ice.
- If using a shaker, seal tightly and shake vigorously for 15-20 seconds to chill the cocktail. If not, just stir well.
- Fill two highball glasses or Mason jars with ice. Strain the cocktail mixture into the glasses. Garnish with watermelon wedges and fresh basil sprigs.
