Ingredients:

  • 4 cups (600g) cubed seedless watermelon
  • 1/2 cup (120 ml) vodka (or gin)
  • 1/4 cup (60 ml) fresh lime juice
  • 1/4 cup (60 ml) simple syrup (equal parts sugar and water)
  • 10-12 fresh basil leaves
  • Ice cubes
  • Watermelon wedges (for garnish)
  • Fresh basil sprigs (for garnish)

Instructions:

  1. Combine the watermelon cubes in a blender and blend until smooth. Strain through a fine-mesh sieve or cheesecloth to remove any pulp.
  2. In a cocktail shaker (or a jar with a tight-fitting lid), gently muddle the basil leaves with the lime juice and simple syrup.
  3. Add the strained watermelon juice and vodka (or gin) to the shaker. Fill with ice.
  4. If using a shaker, seal tightly and shake vigorously for 15-20 seconds to chill the cocktail. If not, just stir well.
  5. Fill two highball glasses or Mason jars with ice. Strain the cocktail mixture into the glasses. Garnish with watermelon wedges and fresh basil sprigs.
