  • 14 oz silken tofu
  • 2 green onions, sliced thin
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon red pepper flakes (optional)
  • 1 tablespoon soy sauce (for drizzling, optional)

Instructions:

  1. In a medium saucepan, combine vegetable broth, soy sauce, sesame oil, ginger, and garlic.
  2. Bring the mixture to a simmer over medium heat. Cook for about 5-7 minutes until fragrant.
  3. Gently add silken tofu to the simmering broth. Use a ladle to break the tofu into smaller pieces without mashing it.
  4. Allow the tofu to warm through (about 5 minutes), ensuring it does not boil.
  5. Remove from heat and ladle the soup into bowls. Top with sliced green onions, chopped cilantro, red pepper flakes, and a drizzle of soy sauce if desired.
