Ingredients:
- 4 cups vegetable broth
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon grated fresh ginger
- 2 cloves garlic, minced
- 14 oz silken tofu
- 2 green onions, sliced thin
- 1/4 cup fresh cilantro, chopped
- 1 teaspoon red pepper flakes (optional)
- 1 tablespoon soy sauce (for drizzling, optional)
Instructions:
- In a medium saucepan, combine vegetable broth, soy sauce, sesame oil, ginger, and garlic.
- Bring the mixture to a simmer over medium heat. Cook for about 5-7 minutes until fragrant.
- Gently add silken tofu to the simmering broth. Use a ladle to break the tofu into smaller pieces without mashing it.
- Allow the tofu to warm through (about 5 minutes), ensuring it does not boil.
- Remove from heat and ladle the soup into bowls. Top with sliced green onions, chopped cilantro, red pepper flakes, and a drizzle of soy sauce if desired.
- Serve hot and enjoy!
