Ingredients:

  • 1 cup fresh raspberries (approx. 125g)
  • 2 tablespoons granulated sugar
  • 1 tablespoon fresh lemon juice
  • 0.25 teaspoon rose water
  • 12 ounces chilled sparkling water
  • 2 fresh mint sprigs
  • 1 teaspoon freeze-dried raspberry powder (optional garnish)

Instructions:

  1. Place 1 cup of fresh raspberries in a small bowl with 2 tablespoons of sugar and 1 tablespoon of lemon juice.
  2. Use a muddler or the back of a large spoon to crush the berries until they form a thick, glossy slurry.
  3. Set a fine mesh sieve over a clean pitcher and pour the berry mixture through it. Press firmly with a spatula until only dry seeds remain in the sieve.
  4. Stir in 0.25 teaspoon of rose water into the strained raspberry concentrate. Mix well until the floral scent is evenly distributed.
  5. Divide the raspberry base between two glasses filled with ice.
  6. Slowly pour 6 ounces of chilled sparkling water into each glass until the liquid swirls into a pink gradient.
  7. Slap the 2 fresh mint sprigs between your palms to release the oils. Garnish each glass with mint and a dusting of freeze dried raspberry powder until the surface looks like a velvet painting.
