Ingredients:
- 1 cup fresh raspberries (approx. 125g)
- 2 tablespoons granulated sugar
- 1 tablespoon fresh lemon juice
- 0.25 teaspoon rose water
- 12 ounces chilled sparkling water
- 2 fresh mint sprigs
- 1 teaspoon freeze-dried raspberry powder (optional garnish)
Instructions:
- Place 1 cup of fresh raspberries in a small bowl with 2 tablespoons of sugar and 1 tablespoon of lemon juice.
- Use a muddler or the back of a large spoon to crush the berries until they form a thick, glossy slurry.
- Set a fine mesh sieve over a clean pitcher and pour the berry mixture through it. Press firmly with a spatula until only dry seeds remain in the sieve.
- Stir in 0.25 teaspoon of rose water into the strained raspberry concentrate. Mix well until the floral scent is evenly distributed.
- Divide the raspberry base between two glasses filled with ice.
- Slowly pour 6 ounces of chilled sparkling water into each glass until the liquid swirls into a pink gradient.
- Slap the 2 fresh mint sprigs between your palms to release the oils. Garnish each glass with mint and a dusting of freeze dried raspberry powder until the surface looks like a velvet painting.
