Ingredients:

  • 2 cups cooked, shredded chicken (about 450g)
  • 1 tablespoon olive oil (15ml)
  • 1 teaspoon chili powder (5g)
  • 1 teaspoon cumin (5g)
  • ½ teaspoon garlic powder (2.5g)
  • Salt and pepper to taste
  • 1 bag tortilla chips (about 12 ounces or 340g)
  • 2 cups shredded cheddar cheese (about 200g)
  • 1 cup black beans, drained and rinsed (about 240g)
  • ½ cup diced tomatoes (about 80g)
  • 1 jalapeño, sliced (optional)
  • ½ cup sour cream (about 120g)
  • ¼ cup sliced green onions (about 15g)
  • ¼ cup fresh cilantro, chopped (about 10g)
  • Sliced avocado (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine shredded chicken, olive oil, chili powder, cumin, garlic powder, salt, and pepper. Mix well.
  3. On a baking dish, spread an even layer of tortilla chips. Evenly distribute the seasoned chicken, black beans, diced tomatoes, and jalapeño slices over the chips. Top generously with shredded cheese.
  4. Place the baking dish in the oven for 10-15 minutes, or until cheese is melted and bubbly.
  5. Remove from the oven and top with dollops of sour cream, green onions, cilantro, and avocado slices.
  6. Serve immediately and enjoy hot, possibly with your favorite salsa on the side!
