Ingredients:
- 2 cups cooked, shredded chicken (about 450g)
- 1 tablespoon olive oil (15ml)
- 1 teaspoon chili powder (5g)
- 1 teaspoon cumin (5g)
- ½ teaspoon garlic powder (2.5g)
- Salt and pepper to taste
- 1 bag tortilla chips (about 12 ounces or 340g)
- 2 cups shredded cheddar cheese (about 200g)
- 1 cup black beans, drained and rinsed (about 240g)
- ½ cup diced tomatoes (about 80g)
- 1 jalapeño, sliced (optional)
- ½ cup sour cream (about 120g)
- ¼ cup sliced green onions (about 15g)
- ¼ cup fresh cilantro, chopped (about 10g)
- Sliced avocado (optional)
Instructions:
- Preheat the oven to 350°F (175°C).
- In a bowl, combine shredded chicken, olive oil, chili powder, cumin, garlic powder, salt, and pepper. Mix well.
- On a baking dish, spread an even layer of tortilla chips. Evenly distribute the seasoned chicken, black beans, diced tomatoes, and jalapeño slices over the chips. Top generously with shredded cheese.
- Place the baking dish in the oven for 10-15 minutes, or until cheese is melted and bubbly.
- Remove from the oven and top with dollops of sour cream, green onions, cilantro, and avocado slices.
- Serve immediately and enjoy hot, possibly with your favorite salsa on the side!
