Ingredients:

  • 1 pound (450g) ground beef, browned and drained
  • 1 (15 ounce/425g) can chili beans, undrained
  • 1 (10 ounce/285g) can diced tomatoes and green chilies (like Rotel), undrained
  • 1 (8 ounce/225g) package cream cheese, softened
  • 1 cup (100g) shredded cheddar cheese
  • 1/2 cup (50g) shredded Monterey Jack cheese
  • 1/4 cup (20g) chopped green onions, for garnish (optional)

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Brown ground beef in a large skillet over medium heat; drain excess grease.
  3. In a mixing bowl, combine browned ground beef, chili beans, and diced tomatoes and green chilies.
  4. Spread softened cream cheese in the bottom of the baking dish.
  5. Pour the beef mixture over the cream cheese.
  6. Sprinkle with cheddar and Monterey Jack cheese.
  7. Bake for 20 minutes, or until cheese is melted and bubbly.
  8. Sprinkle with green onions (optional).
  9. Serve hot with tortilla chips, crackers, or veggies.
