Ingredients:
- 1 rotisserie chicken (about 2-3 lbs/900g-1.3kg), skin removed, meat shredded or diced
- 1/2 cup (120ml) mayonnaise
- 2 tablespoons (30ml) Dijon mustard
- 1/4 cup (60ml) finely chopped celery
- 1/4 cup (60ml) halved red grapes
- 2 tablespoons (30ml) finely chopped red onion
- 2 tablespoons (30ml) chopped fresh parsley
- 1 tablespoon (15ml) lemon juice
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt (or to taste)
- Optional: 1/4 cup (60ml) chopped toasted pecans or walnuts
Instructions:
- Remove the skin from the rotisserie chicken. Shred or dice the meat into bite-sized pieces.
- In a large mixing bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
- Add the shredded chicken, celery, grapes, red onion, and parsley to the bowl.
- Gently stir all ingredients until thoroughly combined and the chicken is evenly coated with the dressing.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavours to meld (optional).
- Before serving, taste and adjust seasoning (salt, pepper, lemon juice) as needed.
- Serve immediately or store in the refrigerator for up to 3 days.
