Ingredients:

  • 1 rotisserie chicken (about 2-3 lbs/900g-1.3kg), skin removed, meat shredded or diced
  • 1/2 cup (120ml) mayonnaise
  • 2 tablespoons (30ml) Dijon mustard
  • 1/4 cup (60ml) finely chopped celery
  • 1/4 cup (60ml) halved red grapes
  • 2 tablespoons (30ml) finely chopped red onion
  • 2 tablespoons (30ml) chopped fresh parsley
  • 1 tablespoon (15ml) lemon juice
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt (or to taste)
  • Optional: 1/4 cup (60ml) chopped toasted pecans or walnuts

Instructions:

  1. Remove the skin from the rotisserie chicken. Shred or dice the meat into bite-sized pieces.
  2. In a large mixing bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
  3. Add the shredded chicken, celery, grapes, red onion, and parsley to the bowl.
  4. Gently stir all ingredients until thoroughly combined and the chicken is evenly coated with the dressing.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavours to meld (optional).
  6. Before serving, taste and adjust seasoning (salt, pepper, lemon juice) as needed.
  7. Serve immediately or store in the refrigerator for up to 3 days.
