Ingredients:
- 2 slices of bread (Sourdough, Brioche, or Texas toast recommended - about 100g)
- 1 tablespoon (14g) unsalted butter, softened
- 1/4 cup (approximately 28g) shredded Cheddar cheese, sharp or mild, your choice
- 1/4 cup (approximately 28g) shredded Mozzarella cheese, low-moisture
- Optional: A pinch of garlic powder or onion powder
Instructions:
- Evenly spread softened butter on one side of each slice of bread.
- In a small bowl, mix the cheddar and mozzarella cheese. Pile the cheese mixture evenly onto the unbuttered side of one slice of bread.
- Place the second slice of bread, butter-side up, on top of the cheese.
- Place the sandwich in a cold non-stick skillet (this allows the butter to melt slowly and evenly). Turn the heat to medium-low.
- Cook for 4-5 minutes per side, or until the bread is golden brown and the cheese is melted and gooey. Gently press down on the sandwich with the spatula occasionally to ensure even browning.
- The cheese should be completely melted and the bread a lovely golden brown. Check for doneness
- Cut the sandwich in half and serve immediately for maximum cheesy goodness.
