Ingredients:
- 1 cup (2 sticks or 226g) unsalted butter, softened to room temperature
- 3-4 cups (360-480g) powdered sugar, sifted (confectioners' sugar)
- 1/4 cup (60ml) milk or heavy cream (or more, as needed)
- 2 teaspoons (10ml) pure vanilla extract
- Pinch of salt
- Gel food coloring (optional)
Instructions:
- In the bowl of a stand mixer (or using a hand mixer), beat the softened butter on medium speed until light and fluffy, about 3 minutes. Scraping down the sides of the bowl occasionally.
- Reduce the mixer speed to low and gradually add the sifted powdered sugar, one cup at a time. Mix until combined after each addition, scraping down the sides of the bowl as needed.
- Add the milk (or cream), vanilla extract, and salt. Beat on low speed until just combined.
- Increase the mixer speed to medium-high and beat for 2-3 minutes, or until the frosting is light, fluffy, and smooth.
- If the frosting is too thick, add more milk (or cream), one tablespoon at a time, until it reaches the desired consistency. If it's too thin, add more powdered sugar, one tablespoon at a time.
- If desired, add gel food coloring, one drop at a time, mixing until evenly combined.
- Use immediately or store in an airtight container in the refrigerator for up to 1 week. Bring to room temperature and re-whip before using.
