Ingredients:

  • 1 cup (2 sticks or 226g) unsalted butter, softened to room temperature
  • 3-4 cups (360-480g) powdered sugar, sifted (confectioners' sugar)
  • 1/4 cup (60ml) milk or heavy cream (or more, as needed)
  • 2 teaspoons (10ml) pure vanilla extract
  • Pinch of salt
  • Gel food coloring (optional)

Instructions:

  1. In the bowl of a stand mixer (or using a hand mixer), beat the softened butter on medium speed until light and fluffy, about 3 minutes. Scraping down the sides of the bowl occasionally.
  2. Reduce the mixer speed to low and gradually add the sifted powdered sugar, one cup at a time. Mix until combined after each addition, scraping down the sides of the bowl as needed.
  3. Add the milk (or cream), vanilla extract, and salt. Beat on low speed until just combined.
  4. Increase the mixer speed to medium-high and beat for 2-3 minutes, or until the frosting is light, fluffy, and smooth.
  5. If the frosting is too thick, add more milk (or cream), one tablespoon at a time, until it reaches the desired consistency. If it's too thin, add more powdered sugar, one tablespoon at a time.
  6. If desired, add gel food coloring, one drop at a time, mixing until evenly combined.
  7. Use immediately or store in an airtight container in the refrigerator for up to 1 week. Bring to room temperature and re-whip before using.
