Ingredients:
- 1 1/2 cups (192g) all-purpose flour, plus extra for dusting
- 3 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 tablespoon granulated sugar
- 1 1/4 cups (300ml) milk, any kind
- 1 large egg
- 3 tablespoons (45ml) unsalted butter, melted, plus extra for greasing the pan
Instructions:
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- In a separate bowl, whisk together the milk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and gently fold together until just combined. A few lumps are okay!
- Preheat a lightly oiled griddle or non-stick frying pan over medium heat.
- Pour 1/4 cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes, or until bubbles begin to form and pop on the surface.
- Flip the pancakes and cook for another 2-3 minutes, or until golden brown on both sides and cooked through.
- Serve immediately with your favourite toppings.
