Ingredients:

  • 1 1/2 cups (192g) all-purpose flour, plus extra for dusting
  • 3 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 1/4 cups (300ml) milk, any kind
  • 1 large egg
  • 3 tablespoons (45ml) unsalted butter, melted, plus extra for greasing the pan

Instructions:

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In a separate bowl, whisk together the milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and gently fold together until just combined. A few lumps are okay!
  4. Preheat a lightly oiled griddle or non-stick frying pan over medium heat.
  5. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes, or until bubbles begin to form and pop on the surface.
  7. Flip the pancakes and cook for another 2-3 minutes, or until golden brown on both sides and cooked through.
  8. Serve immediately with your favourite toppings.
