Ingredients:
- 1 cup (2 sticks/227g) unsalted butter, softened
- 2 cups (400g) granulated sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 2 cups (240g) all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup (120ml) milk
Instructions:
- Preheat oven to 325°F (160°C). Grease and flour a 9x5 inch loaf pan (or line with parchment paper).
- Cream together the softened butter and sugar until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition. Incorporate the vanilla extract.
- In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix!
- Pour the batter into the prepared loaf pan and spread evenly. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
