Ingredients:

  • 2 oz (60ml) Amaretto (Disaronno is the classic)
  • 1 oz (30ml) Fresh Lemon Juice
  • 0.5 oz (15ml) Simple Syrup
  • 1 Egg White (Optional)
  • 2 dashes Angostura Bitters (Optional)
  • Garnish: Lemon wedge/wheel, Maraschino Cherry

Instructions:

  1. Place your rocks glass in the freezer or fill it with ice while you prepare the drink.
  2. In a cocktail shaker (without ice!), add amaretto, fresh lemon juice, simple syrup, egg white (if using), and Angostura bitters (if using). This is the dry shake.
  3. Seal the shaker tightly and shake vigorously for 15-20 seconds. This emulsifies the egg white and creates a lovely foam.
  4. Add ice to the shaker, filling it about halfway.
  5. Seal the shaker and shake vigorously again for 15-20 seconds, until well-chilled.
  6. Remove the chilled glass from the freezer or empty the ice. Strain the cocktail into the glass filled with ice.
  7. Garnish with a lemon wedge/wheel and a Maraschino cherry. Serve immediately and enjoy!
