Ingredients:
- 1 cup (200g) fresh or frozen cranberries
- 1 cup (200g) granulated sugar
- 1 cup (240ml) water
- 2 sprigs fresh rosemary
- 2 oz (60ml) gin (London Dry)
- 1 oz (30ml) cranberry rosemary syrup
- 0.75 oz (22ml) fresh lime juice
- 4 oz (120ml) chilled club soda or sparkling water
- Fresh cranberries and rosemary sprigs, for garnish
Instructions:
- Combine cranberries, sugar, water, and rosemary sprigs in a small saucepan.
- Bring to a simmer over medium heat, stirring until sugar dissolves.
- Reduce heat and simmer for 5 minutes, gently crushing cranberries. Let the berries burst and liquid thicken slightly.
- Remove from heat and let steep for 15 minutes to infuse rosemary flavor.
- Strain the syrup through a fine-mesh strainer into a jar, discarding solids. Let cool completely.
- Fill a cocktail shaker with ice.
- Add gin, cranberry rosemary syrup, and lime juice to the shaker.
- Shake well until the shaker is well-chilled (about 15-20 seconds).
- Strain the cocktail into a highball or coupe glass filled with ice.
- Top with chilled club soda or sparkling water.
- Garnish with fresh cranberries and a rosemary sprig. Serve immediately.
