Ingredients:
- 8 oz (225g) Ground Pork, seasoned with sage, thyme and a pinch of red pepper flakes
- 1 tbsp (15 ml) Olive Oil
- 1 large Beefsteak Tomato, sliced into ½-inch thick rounds
- 1 tbsp (15 ml) Olive Oil
- Salt and Freshly Ground Black Pepper, to taste
- 6 slices Thick-Cut Bacon
- 2 large Eggs
- 1 tbsp (15 ml) Butter
- 2 Brioche Buns, split and lightly toasted
- 2 tbsp (30 ml) HP Sauce (or Worcestershire sauce, to taste)
- Optional: Cheddar Cheese slices
Instructions:
- Form ground pork into two patties.
- Heat olive oil in a large skillet over medium heat. Cook patties until cooked through and browned on both sides, about 6-8 minutes per side. Remove from skillet and set aside, keeping warm.
- In the same skillet, add tomatoes, grilling each side until softened. Season with salt and pepper. Remove from skillet and set aside, keeping warm.
- In the same skillet, cook bacon until crispy. Remove from skillet and set aside on paper towels to drain excess grease. Reserve bacon fat.
- In a small skillet, melt butter over medium-low heat. Gently crack eggs into the skillet and cook to your desired doneness (runny yolks are recommended!). Season with salt and pepper.
- Spread HP Sauce on the cut sides of the toasted brioche buns. Layer with bacon, sausage patty, grilled tomato, fried egg, and optional cheddar cheese. Top with the other half of the bun.
- Serve immediately.
