Ingredients:

  • 2 cups (250g) all-purpose flour, plus extra for dusting
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons (25g) granulated sugar
  • 2 large eggs
  • 1 3/4 cups (420ml) whole milk
  • 1/2 cup (120ml) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract

Instructions:

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In a separate large bowl, whisk together the eggs, milk, melted butter, and vanilla extract.
  3. Gradually add the wet ingredients to the dry ingredients, whisking until just combined. Don't overmix! A few lumps are okay.
  4. Preheat your waffle iron according to the manufacturer's instructions. Lightly grease it if necessary.
  5. Pour the appropriate amount of batter (according to your waffle iron's instructions) onto the hot waffle iron. Close the lid and cook until golden brown and crispy, usually 2-3 minutes.
  6. Carefully remove the waffle from the iron and place it on a cooling rack (if using) to maintain its crispness.
  7. Repeat steps 5 and 6 with the remaining batter.
  8. Serve immediately with your favorite toppings.
