Ingredients:
- 1 pound ground chicken or minced turkey

- Juice of 1 lime
- ½ cup natural peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 tablespoon water (more as needed)
- 1 teaspoon minced garlic
- ½ teaspoon red pepper flakes (optional)
- 1 head of iceberg or butter lettuce
Instructions:
- Heat oil in a large skillet over medium heat.
- Add minced garlic and ginger, sauté until fragrant (about 30 seconds).
- Stir in ground chicken and cook until browned (about 5-7 minutes).
- Add bell pepper, carrots, green onions, soy sauce, fish sauce, brown sugar, red pepper flakes, and lime juice. Cook for an additional 2-3 minutes until vegetables are tender.
- In a mixing bowl, combine peanut butter, soy sauce, honey, rice vinegar, water, minced garlic, and red pepper flakes. Whisk until smooth.
- Carefully separate lettuce leaves. Spoon the chicken mixture into each leaf.
- Drizzle with peanut sauce and add any extra toppings if desired.
- Enjoy immediately, folding the lettuce wraps around the filling.
