Ingredients:

  • 1 pound ground chicken or minced turkey
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 red bell pepper, diced
  • ½ cup carrots, shredded
  • 3 green onions, chopped
  • 3 tablespoons soy sauce
  • 1 tablespoon fish sauce (optional)
  • 1 tablespoon brown sugar
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Juice of 1 lime
  • ½ cup natural peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon water (more as needed)
  • 1 teaspoon minced garlic
  • ½ teaspoon red pepper flakes (optional)
  • 1 head of iceberg or butter lettuce

Instructions:

  1. Heat oil in a large skillet over medium heat.
  2. Add minced garlic and ginger, sauté until fragrant (about 30 seconds).
  3. Stir in ground chicken and cook until browned (about 5-7 minutes).
  4. Add bell pepper, carrots, green onions, soy sauce, fish sauce, brown sugar, red pepper flakes, and lime juice. Cook for an additional 2-3 minutes until vegetables are tender.
  5. In a mixing bowl, combine peanut butter, soy sauce, honey, rice vinegar, water, minced garlic, and red pepper flakes. Whisk until smooth.
  6. Carefully separate lettuce leaves. Spoon the chicken mixture into each leaf.
  7. Drizzle with peanut sauce and add any extra toppings if desired.
  8. Enjoy immediately, folding the lettuce wraps around the filling.
