Ingredients:
- 1 pound ground beef (or ground turkey)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning mix (1 oz)
- 1 cup water
- Salt and pepper to taste
- 2 cans refried beans (15 oz each)
- 1 cup salsa
- 2 cups shredded cheddar cheese (8 oz)
- 2 cups Fritos corn chips (3 oz)
- Optional garnishes: sliced jalapeños, chopped cilantro, sour cream, or diced avocados
Instructions:
- In a large skillet, heat a drizzle of oil over medium heat. Add diced onion and cook until softened, about 3-4 minutes. Stir in minced garlic and cook for an additional minute.
- Add ground beef (or turkey) to the skillet. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat.
- Add taco seasoning and water to the skillet. Stir to combine. Simmer for 5 minutes, allowing flavors to meld. Season with salt and pepper as needed.
- Preheat your oven to 350°F (175°C). Spread refried beans evenly at the bottom of the baking dish. Pour the seasoned meat mixture over the beans, followed by salsa. Top with shredded cheese and half of the Fritos.
- Bake in the preheated oven for 20-30 minutes, until the cheese is bubbly and golden.
- Remove from the oven and sprinkle the remaining Fritos on top. Let cool for a few minutes before serving.
