Ingredients:
- 1 cup (240g) peeled and cubed sweet potato
- 1 tbsp (15ml) olive oil
- 1/4 tsp (1g) garlic powder
- 1 pinch (0.5g) salt
- 2 (6-inch) whole wheat tortillas
- 1/2 cup (56g) shredded mild cheddar cheese
- 1/4 cup (60g) canned black beans, rinsed and mashed
Instructions:
- Steam or microwave the cubed sweet potatoes until fork-tender (approximately 4-6 minutes in the microwave). Drain any excess water and mash thoroughly with olive oil and garlic powder until a smooth, thick paste forms.
- Lay the tortillas flat. Spread a generous layer of the sweet potato mash over one half of each tortilla.
- Sprinkle the mashed black beans directly onto the potato layer and top with shredded cheddar cheese.
- Heat a non-stick skillet over medium heat. Place the folded quesadillas in the pan and cook for 3-4 minutes per side until the exterior is golden brown and the cheese has melted.
