Ingredients:

  • 1 cup (240g) peeled and cubed sweet potato
  • 1 tbsp (15ml) olive oil
  • 1/4 tsp (1g) garlic powder
  • 1 pinch (0.5g) salt
  • 2 (6-inch) whole wheat tortillas
  • 1/2 cup (56g) shredded mild cheddar cheese
  • 1/4 cup (60g) canned black beans, rinsed and mashed

Instructions:

  1. Steam or microwave the cubed sweet potatoes until fork-tender (approximately 4-6 minutes in the microwave). Drain any excess water and mash thoroughly with olive oil and garlic powder until a smooth, thick paste forms.
  2. Lay the tortillas flat. Spread a generous layer of the sweet potato mash over one half of each tortilla.
  3. Sprinkle the mashed black beans directly onto the potato layer and top with shredded cheddar cheese.
  4. Heat a non-stick skillet over medium heat. Place the folded quesadillas in the pan and cook for 3-4 minutes per side until the exterior is golden brown and the cheese has melted.
