Ingredients:

  • 1 lb lean ground beef (90/10)
  • 1.5 lbs sweet potatoes, peeled and cubed into 1/2-inch pieces
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1/2 cup frozen peas
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper

Instructions:

  1. Dice sweet potatoes into uniform 1/2-inch cubes; chop onion and pepper into similar sizes.
  2. Heat olive oil in a 12-inch skillet over medium-high heat. Add ground beef, breaking it apart with a spatula, and cook until deeply browned. Drain approximately 70% of the excess fat.
  3. Add diced onion and red pepper to the skillet. Sauté for 3-4 minutes until onion is translucent.
  4. Stir in minced garlic and the seasoning blend (paprika, cumin, oregano, salt, pepper, and cayenne), stirring for 60 seconds until fragrant.
  5. Add cubed sweet potatoes to the pan and stir to coat. Reduce heat to medium, cover with a lid, and steam for 8-10 minutes.
  6. Remove the lid and cook for another 5 minutes uncovered to brown the edges of the potatoes.
  7. Stir in frozen peas during the last 2 minutes of cooking. Remove from heat once potatoes are fork-tender.
