Ingredients:
- 1 lb lean ground beef (90/10)
- 1.5 lbs sweet potatoes, peeled and cubed into 1/2-inch pieces
- 1 tbsp olive oil
- 1 medium yellow onion, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 1/2 cup frozen peas
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1/2 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper
Instructions:
- Dice sweet potatoes into uniform 1/2-inch cubes; chop onion and pepper into similar sizes.
- Heat olive oil in a 12-inch skillet over medium-high heat. Add ground beef, breaking it apart with a spatula, and cook until deeply browned. Drain approximately 70% of the excess fat.
- Add diced onion and red pepper to the skillet. Sauté for 3-4 minutes until onion is translucent.
- Stir in minced garlic and the seasoning blend (paprika, cumin, oregano, salt, pepper, and cayenne), stirring for 60 seconds until fragrant.
- Add cubed sweet potatoes to the pan and stir to coat. Reduce heat to medium, cover with a lid, and steam for 8-10 minutes.
- Remove the lid and cook for another 5 minutes uncovered to brown the edges of the potatoes.
- Stir in frozen peas during the last 2 minutes of cooking. Remove from heat once potatoes are fork-tender.
