Ingredients:

  • 3 ripe bananas, mashed (approximately 1 cup/240g)
  • 1/3 cup (80ml) unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 cup (200g) granulated sugar
  • 1 1/2 cups (190g) all-purpose flour
  • Optional: 1 teaspoon ground cinnamon
  • Optional: 1/2 cup (80g) chopped walnuts or pecans
  • Optional: 1/2 cup (90g) chocolate chips

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease or line a muffin tin with paper liners.
  2. Mash the bananas in a large bowl until smooth.
  3. Combine melted butter with mashed bananas.
  4. Whisk in the egg and vanilla extract until well mixed.
  5. Sprinkle baking soda and salt over the mixture, stir to combine.
  6. Add sugar and, if desired, cinnamon. Mix until just incorporated.
  7. Fold in the flour until no dry streaks remain; do not over-mix.
  8. Gently fold in nuts or chocolate chips if using.
  9. Spoon the batter evenly into muffin cups, filling them about 2/3 full.
  10. Bake for 20-25 minutes until golden brown and a toothpick inserted into the centre comes out clean.
  11. Cool muffins in the tin for 5 minutes, then transfer to a wire rack to cool completely.
