Ingredients:
- 3 ripe bananas, mashed (approximately 1 cup/240g)
- 1/3 cup (80ml) unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 cup (200g) granulated sugar
- 1 1/2 cups (190g) all-purpose flour
- Optional: 1 teaspoon ground cinnamon
- Optional: 1/2 cup (80g) chopped walnuts or pecans
- Optional: 1/2 cup (90g) chocolate chips
Instructions:
- Preheat the oven to 350°F (175°C) and grease or line a muffin tin with paper liners.
- Mash the bananas in a large bowl until smooth.
- Combine melted butter with mashed bananas.
- Whisk in the egg and vanilla extract until well mixed.
- Sprinkle baking soda and salt over the mixture, stir to combine.
- Add sugar and, if desired, cinnamon. Mix until just incorporated.
- Fold in the flour until no dry streaks remain; do not over-mix.
- Gently fold in nuts or chocolate chips if using.
- Spoon the batter evenly into muffin cups, filling them about 2/3 full.
- Bake for 20-25 minutes until golden brown and a toothpick inserted into the centre comes out clean.
- Cool muffins in the tin for 5 minutes, then transfer to a wire rack to cool completely.
