Ingredients:
- 1 1/2 cups (192g) all-purpose flour, spooned and leveled
- 2 tablespoons (25g) granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/4 cups (300ml) milk (whole or 2%)
- 1 large egg
- 2 tablespoons (28g) unsalted butter, melted and slightly cooled
- 1 teaspoon vanilla extract
- Vegetable oil or butter, for greasing the pan
Instructions:
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
- In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and gently fold until just combined. A few lumps are okay!
- Heat a lightly oiled griddle or non-stick pan over medium heat. You want it hot enough to sizzle a drop of water.
- Pour 1/4 cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through. Bubbles will form on the top and the edges will look set when it's time to flip.
- Serve the pancakes immediately with your favorite toppings.
