Ingredients:

  • 1 1/2 cups (192g) all-purpose flour, spooned and leveled
  • 2 tablespoons (25g) granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/4 cups (300ml) milk (whole or 2%)
  • 1 large egg
  • 2 tablespoons (28g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • Vegetable oil or butter, for greasing the pan

Instructions:

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  2. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and gently fold until just combined. A few lumps are okay!
  4. Heat a lightly oiled griddle or non-stick pan over medium heat. You want it hot enough to sizzle a drop of water.
  5. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through. Bubbles will form on the top and the edges will look set when it's time to flip.
  7. Serve the pancakes immediately with your favorite toppings.
