Ingredients:
- 2 tbsp Neutral cooking oil (for rice)
- 4 cups (700 g) Cooked Jasmine or short-grain white rice (ideally chilled and day-old)
- 2 cloves Garlic, finely minced (for rice)
- Pinch of Sea salt
- 1 lb (450 g) Lean beef mince (ground beef)
- 1 tbsp Neutral cooking oil (for beef)
- 2 tsp Fresh Ginger, grated
- 1/2 cup Low sodium Soy Sauce
- 1/4 cup Honey
- 2 tbsp Rice Vinegar
- 1 tbsp Gochujang (Korean chilli paste)
- 1 tsp Sesame Oil
- 1/2 tsp Black pepper
- 1 tsp Cornflour (Cornstarch), mixed with 1 tbsp cold water (slurry)
- 4 Large Eggs
- 4 Spring Onions (Scallions), thinly sliced (for garnish)
- 2 tbsp Toasted Sesame Seeds (for garnish)
Instructions:
- Mix the Glaze: In a small bowl, combine the soy sauce, honey, rice vinegar, Gochujang, pepper, and cornflour slurry ingredients. Whisk until smooth and set aside. Finely mince the garlic and grate the ginger. Slice the spring onions thinly.
- Crisp the Rice: Heat 1 tbsp of neutral oil in a frying pan over medium-high heat. Add the cold, cooked rice and break it up gently. Let it sit for 3-4 minutes to develop a crust on the bottom.
- Add Garlic: Stir the rice, add the remaining oil and the minced garlic. Sauté for 2-3 minutes until the garlic is fragrant and the rice has hot, crispy patches. Season with salt. Transfer the rice to bowls and keep warm.
- Cook the Beef Mince: Heat a wok or large frying pan over high heat. Add the beef mince and break it up. Sauté for 5-7 minutes until fully browned and crispy. Drain off any excess fat.
- Add Aromatics: Add the grated ginger to the beef and cook for 1 minute until fragrant.
- Glaze and Reduce: Give the pre-mixed glaze a quick stir and pour it over the beef. Bring the mixture to a rapid simmer, stirring constantly. Cook until the glaze coats the beef thoroughly and is sticky (about 2-3 minutes). Stir in the 1 tsp of sesame oil. Remove from heat.
- Fry the Eggs and Assemble: In a clean pan, fry the eggs sunny-side up until the whites are set and the yolks are runny. Season with salt and pepper. Divide the sticky glazed beef mince over the crispy garlic rice. Top each portion with a fried egg, sliced spring onions, and toasted sesame seeds.
