Ingredients:
- ½ cup (120ml) water
- ½ cup (100g) granulated sugar
- ½ cup (120ml) pumpkin puree (canned or fresh, unsweetened)
- 1 teaspoon pumpkin pie spice
- ½ teaspoon vanilla extract
- 2 cups (475ml) milk (whole, 2%, almond, or oat milk)
- Double shot espresso (approx. 2 ounces/60ml), or ½ cup (120ml) strong brewed coffee
- Optional: Whipped cream, additional pumpkin pie spice for garnish
Instructions:
- Combine water, sugar, pumpkin puree, and pumpkin pie spice in a small saucepan.
- Bring the mixture to a simmer over medium heat, stirring constantly.
- Reduce the heat to low and simmer for 5 minutes, stirring occasionally, until slightly thickened.
- Remove from heat and stir in vanilla extract.
- Heat and froth the milk. If you don't have a frother, gently heat the milk in a saucepan until steaming, then whisk vigorously.
- Divide the pumpkin spice syrup between two mugs.
- Pour the espresso or strong coffee over the syrup in each mug.
- Pour the hot milk over the coffee and syrup, holding back the foam with a spoon (if using).
- Spoon the frothed milk over the latte and sprinkle with additional pumpkin pie spice. Serve immediately.
