Ingredients:

  • ½ cup (120ml) water
  • ½ cup (100g) granulated sugar
  • ½ cup (120ml) pumpkin puree (canned or fresh, unsweetened)
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon vanilla extract
  • 2 cups (475ml) milk (whole, 2%, almond, or oat milk)
  • Double shot espresso (approx. 2 ounces/60ml), or ½ cup (120ml) strong brewed coffee
  • Optional: Whipped cream, additional pumpkin pie spice for garnish

Instructions:

  1. Combine water, sugar, pumpkin puree, and pumpkin pie spice in a small saucepan.
  2. Bring the mixture to a simmer over medium heat, stirring constantly.
  3. Reduce the heat to low and simmer for 5 minutes, stirring occasionally, until slightly thickened.
  4. Remove from heat and stir in vanilla extract.
  5. Heat and froth the milk. If you don't have a frother, gently heat the milk in a saucepan until steaming, then whisk vigorously.
  6. Divide the pumpkin spice syrup between two mugs.
  7. Pour the espresso or strong coffee over the syrup in each mug.
  8. Pour the hot milk over the coffee and syrup, holding back the foam with a spoon (if using).
  9. Spoon the frothed milk over the latte and sprinkle with additional pumpkin pie spice. Serve immediately.
