Ingredients:
- 1 medium pumpkin (3-4 lbs)
- 2 tablespoons olive oil
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground ginger
- Pinch of ground cloves
- 2 large apples (1 lb)
- ¼ cup packed light brown sugar
- 2 tablespoons all-purpose flour
- 2 tablespoons lemon juice
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- ½ cup packed light brown sugar
- ½ cup rolled oats
- ½ cup chopped pecans
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- ½ cup (1 stick) unsalted butter, cold and cubed
- 2 tablespoons maple syrup
Instructions:
- Preheat oven. Cut the pumpkin in half, remove seeds, toss with olive oil and spices, and roast cut-side down until tender. Cool slightly, scoop out flesh, and dice.
- In a large bowl, combine chopped apples, brown sugar, flour, lemon juice, and vanilla extract.
- In a separate bowl, combine flour, brown sugar, oats, pecans, cinnamon, and salt. Cut in cold butter until mixture resembles coarse crumbs. Stir in maple syrup.
- Combine roasted pumpkin and apple mixture in the baking dish. Sprinkle streusel evenly over the top.
- Bake until the topping is golden brown and the filling is bubbly.
- Let cool slightly before serving.
