Ingredients:

  • 1 medium pumpkin (3-4 lbs)
  • 2 tablespoons olive oil
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • Pinch of ground cloves
  • 2 large apples (1 lb)
  • ¼ cup packed light brown sugar
  • 2 tablespoons all-purpose flour
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ½ cup packed light brown sugar
  • ½ cup rolled oats
  • ½ cup chopped pecans
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup (1 stick) unsalted butter, cold and cubed
  • 2 tablespoons maple syrup

Instructions:

  1. Preheat oven. Cut the pumpkin in half, remove seeds, toss with olive oil and spices, and roast cut-side down until tender. Cool slightly, scoop out flesh, and dice.
  2. In a large bowl, combine chopped apples, brown sugar, flour, lemon juice, and vanilla extract.
  3. In a separate bowl, combine flour, brown sugar, oats, pecans, cinnamon, and salt. Cut in cold butter until mixture resembles coarse crumbs. Stir in maple syrup.
  4. Combine roasted pumpkin and apple mixture in the baking dish. Sprinkle streusel evenly over the top.
  5. Bake until the topping is golden brown and the filling is bubbly.
  6. Let cool slightly before serving.
