Ingredients:
- 1 pound (450g) of pork or chicken sausages (like Italian or bratwurst)
- 1 tablespoon (15ml) vegetable oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tablespoon (15g) fresh ginger, grated
- 2 tablespoons (30g) curry powder (mild or hot based on preference)
- 1 teaspoon (5g) ground cumin
- 1 teaspoon (5g) turmeric powder
- 1/2 teaspoon (2g) chili flakes (optional)
- 1 can (13.5 oz / 400ml) coconut milk
- 1 tablespoon (15ml) soy sauce
- 1 tablespoon (15g) brown sugar
- 1 lime, juiced (about 2 tablespoons / 30ml)
- Fresh cilantro for garnish, chopped
Instructions:
- In a large skillet, heat vegetable oil over medium heat. Add sausages and cook until browned on all sides (approximately 8-10 minutes). Remove sausages from the skillet and set aside.
- In the same skillet, add diced onion and sauté until translucent (5 minutes). Stir in minced garlic and grated ginger; cook until fragrant (1-2 minutes).
- Sprinkle in curry powder, cumin, turmeric, and chili flakes; mix for 1 minute to bloom the spices.
- Pour in coconut milk, soy sauce, and brown sugar; stir to combine. Bring to a simmer and let cook for 5 minutes, allowing the sauce to thicken slightly.
- Slice sausages into bite-sized pieces and return them to the skillet. Stir to coat in the sauce and let simmer for another 5 minutes.
- Squeeze in lime juice and garnish with fresh cilantro before serving.
