Ingredients:

  • 1 pound (450g) of pork or chicken sausages (like Italian or bratwurst)
  • 1 tablespoon (15ml) vegetable oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon (15g) fresh ginger, grated
  • 2 tablespoons (30g) curry powder (mild or hot based on preference)
  • 1 teaspoon (5g) ground cumin
  • 1 teaspoon (5g) turmeric powder
  • 1/2 teaspoon (2g) chili flakes (optional)
  • 1 can (13.5 oz / 400ml) coconut milk
  • 1 tablespoon (15ml) soy sauce
  • 1 tablespoon (15g) brown sugar
  • 1 lime, juiced (about 2 tablespoons / 30ml)
  • Fresh cilantro for garnish, chopped

Instructions:

  1. In a large skillet, heat vegetable oil over medium heat. Add sausages and cook until browned on all sides (approximately 8-10 minutes). Remove sausages from the skillet and set aside.
  2. In the same skillet, add diced onion and sauté until translucent (5 minutes). Stir in minced garlic and grated ginger; cook until fragrant (1-2 minutes).
  3. Sprinkle in curry powder, cumin, turmeric, and chili flakes; mix for 1 minute to bloom the spices.
  4. Pour in coconut milk, soy sauce, and brown sugar; stir to combine. Bring to a simmer and let cook for 5 minutes, allowing the sauce to thicken slightly.
  5. Slice sausages into bite-sized pieces and return them to the skillet. Stir to coat in the sauce and let simmer for another 5 minutes.
  6. Squeeze in lime juice and garnish with fresh cilantro before serving.
