Ingredients:

  • 4 cups (400g) fresh or frozen cranberries
  • 1 cup (200g) granulated sugar
  • 1 cup (240 ml) water
  • 1 cinnamon stick
  • 4 whole cloves
  • 1 teaspoon (5 ml) orange zest
  • ½ teaspoon (2.5 ml) lemon zest
  • 6 cups (1.4 L) chilled sparkling water or club soda
  • 1 orange, sliced, for garnish
  • Fresh cranberries, for garnish
  • Rosemary sprigs, for garnish (optional)

Instructions:

  1. Combine cranberries, sugar, water, cinnamon stick, cloves, orange zest, and lemon zest in a medium saucepan.
  2. Bring the mixture to a boil over medium heat, then reduce heat and simmer for 15-20 minutes, or until cranberries have burst and the syrup has thickened slightly.
  3. Remove from heat and strain the syrup through a fine-mesh sieve into a bowl or jar, discarding the solids. Let cool completely.
  4. Fill each glass with ice.
  5. Pour about 2 tablespoons of the spiced cranberry syrup into each glass, then top with sparkling water or club soda. Adjust the amount of syrup to taste.
  6. Garnish with a slice of orange, a few fresh cranberries, and a sprig of rosemary (if desired). Serve immediately.
