Ingredients:
- 4 cups (400g) fresh or frozen cranberries
- 1 cup (200g) granulated sugar
- 1 cup (240 ml) water
- 1 cinnamon stick
- 4 whole cloves
- 1 teaspoon (5 ml) orange zest
- ½ teaspoon (2.5 ml) lemon zest
- 6 cups (1.4 L) chilled sparkling water or club soda
- 1 orange, sliced, for garnish
- Fresh cranberries, for garnish
- Rosemary sprigs, for garnish (optional)
Instructions:
- Combine cranberries, sugar, water, cinnamon stick, cloves, orange zest, and lemon zest in a medium saucepan.
- Bring the mixture to a boil over medium heat, then reduce heat and simmer for 15-20 minutes, or until cranberries have burst and the syrup has thickened slightly.
- Remove from heat and strain the syrup through a fine-mesh sieve into a bowl or jar, discarding the solids. Let cool completely.
- Fill each glass with ice.
- Pour about 2 tablespoons of the spiced cranberry syrup into each glass, then top with sparkling water or club soda. Adjust the amount of syrup to taste.
- Garnish with a slice of orange, a few fresh cranberries, and a sprig of rosemary (if desired). Serve immediately.
