Ingredients:
- 1 ½ cups (192g) all-purpose flour, plus more for dusting
- ½ cup (100g) granulated sugar
- ¼ teaspoon salt
- ¾ cup (1 ½ sticks or 170g) unsalted butter, cold and cubed
- 1 large egg yolk
- 2 tablespoons ice water
- 4 medium apples (about 1 ½ pounds), peeled, cored, and diced
- 2 tablespoons unsalted butter
- ¼ cup (50g) granulated sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- Pinch of ground cloves
- 1 tablespoon lemon juice
- ½ cup (64g) all-purpose flour
- ¼ cup (50g) packed light brown sugar
- ¼ teaspoon ground cinnamon
- ¼ cup (57g) unsalted butter, cold and cubed
- ½ cup (100g) granulated sugar
- 3 tablespoons unsalted butter
- ¼ cup (60ml) heavy cream
- ¼ teaspoon sea salt
Instructions:
- Combine dry crust ingredients. Cut in butter until crumbly. Add egg yolk and water; mix. Press into pan, prick, chill for 30 minutes. Pre-bake at 350°F (175°C) for 15 minutes.
- Melt butter for filling. Add apples, sugar, flour, and spices. Cook until tender and thickened. Stir in lemon juice.
- Combine crumble topping ingredients. Cut in cold butter until crumbly.
- Spread apple filling over crust. Sprinkle crumble topping. Bake at 350°F (175°C) for 30-35 minutes, until golden and bubbly.
- Melt sugar for caramel until amber. Add butter, stir until melted. Remove from heat, stir in cream and salt.
- Cool bars completely. Drizzle with salted caramel before serving.
