Ingredients:
- 1 tablespoon olive oil (15 ml)
- 1 pound ground turkey (450g), preferably lean
- 1 medium yellow onion (approx. 150g), finely diced
- 2 cloves garlic, minced
- 1 tablespoon chili powder (15 ml)
- 1 teaspoon ground cumin (5 ml)
- 1/2 teaspoon smoked paprika (2.5 ml)
- 1/4 teaspoon cayenne pepper (optional, for heat) (1 ml)
- 1/2 teaspoon dried oregano (2.5 ml)
- 1/2 teaspoon salt (2.5 ml)
- 1/4 teaspoon black pepper (1 ml)
- 1/2 cup chicken broth or water (120 ml)
- 1 tablespoon tomato paste (15 ml)
- 2 cups cooked rice or quinoa (approx. 400g), warm
- 1 cup shredded cheddar cheese (approx. 110g)
- 1 cup shredded lettuce (approx. 80g)
- 1 cup diced tomatoes (approx. 150g)
- 1/2 cup sour cream or Greek yogurt (approx. 120g)
- 1/2 cup salsa (approx. 120g)
- 1 avocado, pitted and sliced (approx. 150g)
- Optional: sliced green onions, pickled jalapenos, cilantro
Instructions:
- Heat olive oil in a large skillet. Add diced onion and cook until softened. Add minced garlic and cook until fragrant.
- Add ground turkey to the skillet and break it up with a spoon. Cook until browned and no longer pink. Drain off any excess grease.
- Stir in chili powder, cumin, smoked paprika, cayenne pepper (if using), oregano, salt, and pepper.
- Add chicken broth (or water) and tomato paste. Bring to a simmer and cook until the liquid has reduced and thickened slightly.
- Divide cooked rice or quinoa evenly among four bowls. Top with the seasoned ground turkey.
- Arrange your desired toppings (cheese, lettuce, tomatoes, sour cream, salsa, avocado, etc.) over the turkey.
