Ingredients:

  • 1 tablespoon olive oil (15 ml)
  • 1 pound ground turkey (450g), preferably lean
  • 1 medium yellow onion (approx. 150g), finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder (15 ml)
  • 1 teaspoon ground cumin (5 ml)
  • 1/2 teaspoon smoked paprika (2.5 ml)
  • 1/4 teaspoon cayenne pepper (optional, for heat) (1 ml)
  • 1/2 teaspoon dried oregano (2.5 ml)
  • 1/2 teaspoon salt (2.5 ml)
  • 1/4 teaspoon black pepper (1 ml)
  • 1/2 cup chicken broth or water (120 ml)
  • 1 tablespoon tomato paste (15 ml)
  • 2 cups cooked rice or quinoa (approx. 400g), warm
  • 1 cup shredded cheddar cheese (approx. 110g)
  • 1 cup shredded lettuce (approx. 80g)
  • 1 cup diced tomatoes (approx. 150g)
  • 1/2 cup sour cream or Greek yogurt (approx. 120g)
  • 1/2 cup salsa (approx. 120g)
  • 1 avocado, pitted and sliced (approx. 150g)
  • Optional: sliced green onions, pickled jalapenos, cilantro

Instructions:

  1. Heat olive oil in a large skillet. Add diced onion and cook until softened. Add minced garlic and cook until fragrant.
  2. Add ground turkey to the skillet and break it up with a spoon. Cook until browned and no longer pink. Drain off any excess grease.
  3. Stir in chili powder, cumin, smoked paprika, cayenne pepper (if using), oregano, salt, and pepper.
  4. Add chicken broth (or water) and tomato paste. Bring to a simmer and cook until the liquid has reduced and thickened slightly.
  5. Divide cooked rice or quinoa evenly among four bowls. Top with the seasoned ground turkey.
  6. Arrange your desired toppings (cheese, lettuce, tomatoes, sour cream, salsa, avocado, etc.) over the turkey.
