Ingredients:
- Halloumi cheese, 225g (8oz), cut into 1-inch cubes
- Red bell pepper, 1, seeded and cut into 1-inch pieces
- Yellow bell pepper, 1, seeded and cut into 1-inch pieces
- Red onion, 1, cut into wedges
- Courgette (Zucchini), 1, cut into 1-inch rounds
- Cherry tomatoes, 200g (7oz)
- Olive oil, 2 tbsp
- Salt and pepper to taste
- Lemon juice, 2 tbsp
- Olive oil, 2 tbsp
- Fresh parsley, 2 tbsp, chopped
- Fresh mint, 2 tbsp, chopped
- Garlic, 1 clove, minced
- Pinch of red pepper flakes (optional)
Instructions:
- Prepare the vegetables and halloumi.
- Thread the vegetables and halloumi onto the skewers.
- Brush the skewers with olive oil and season with salt and pepper.
- Grill the skewers over medium heat, turning occasionally, until the vegetables are tender and the halloumi is golden brown.
- Prepare the dressing by whisking together the lemon juice, olive oil, parsley, mint, garlic, and red pepper flakes (if using).
- Drizzle the dressing over the skewers and serve immediately.
