Ingredients:

  • Halloumi cheese, 225g (8oz), cut into 1-inch cubes
  • Red bell pepper, 1, seeded and cut into 1-inch pieces
  • Yellow bell pepper, 1, seeded and cut into 1-inch pieces
  • Red onion, 1, cut into wedges
  • Courgette (Zucchini), 1, cut into 1-inch rounds
  • Cherry tomatoes, 200g (7oz)
  • Olive oil, 2 tbsp
  • Salt and pepper to taste
  • Lemon juice, 2 tbsp
  • Olive oil, 2 tbsp
  • Fresh parsley, 2 tbsp, chopped
  • Fresh mint, 2 tbsp, chopped
  • Garlic, 1 clove, minced
  • Pinch of red pepper flakes (optional)

Instructions:

  1. Prepare the vegetables and halloumi.
  2. Thread the vegetables and halloumi onto the skewers.
  3. Brush the skewers with olive oil and season with salt and pepper.
  4. Grill the skewers over medium heat, turning occasionally, until the vegetables are tender and the halloumi is golden brown.
  5. Prepare the dressing by whisking together the lemon juice, olive oil, parsley, mint, garlic, and red pepper flakes (if using).
  6. Drizzle the dressing over the skewers and serve immediately.
