Ingredients:

  • 12 ounces (340g) fresh or frozen cranberries
  • ¾ cup (150g) granulated sugar
  • ½ cup (120ml) dry sparkling wine (Prosecco, Cava)
  • ¼ cup (60ml) water
  • 1 teaspoon orange zest, finely grated
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
  • Pinch of salt

Instructions:

  1. In a medium saucepan, combine the cranberries, sugar, sparkling wine, water, orange zest, cinnamon, cloves, and salt.
  2. Bring the mixture to a simmer over medium heat, stirring occasionally.
  3. Reduce heat to low and simmer gently for 15-20 minutes, or until the cranberries have burst and the sauce has thickened slightly. Stir occasionally to prevent sticking.
  4. Remove from heat and let cool completely. The sauce will thicken further as it cools. Serve chilled or at room temperature.
